The farmers leave corn in the fields to die and it is handled completely different than sweet corn, because drying in the fields is an important part of harvest. These two types of corn are closely related but they aren't exactly the same. The taste, color and other stuffs are different. Field corn is taller and the leaves are fuller than the ones in sweet corn which is shorter and looks spindly. In dry years the sweet corn gets shorter than normal.

About the field corn we should mention that it's not as sweet as other type so it doesn't taste good. It will be processed into corn meal or corn flour. As usual some field corn is used as seed for next year's crop and is called seed corn.

Field corn is harvested later than sweet corn and the goal is to dry it while it is still on the ears. How they find out if it's dry or not? The silks at the top turn to brown and next other parts turn to dark brown and finally the ear falls so that the silks are pointed at the ground.
